Peruvian Papas a la Huancaina

Food Product
1) 10 medium potatoes (new potatoes are best).
2) 1 pound feta cheese.
3) 2 small hot peppers.
4) 1 cup evaporated milk.
5) 1/2 cup vegetable oil.
6) 2 cloves garlic.
7) 8 saltine crackers.
8) 1 tabspn. prepared mustard.
9) Salt as per requirment .
10) Pepper as per requirment.
11) Lettuce.
12) 3 hard cooked eggs.
13) black olives.
Standard Procedure :
Cook and peel potatoes and allow to cool. In a blender, blend the cheese, peppers, milk, oil, garlic, crackers, mustard, salt and pepper. The sauce should be fairly thick. Add crackers if not thick enough and add milk if too thick. Lay a bed of lettuce in a serving dish and place the potatoes on top. Cover with the sauce. Cut the hard boiled eggs in half and place on top of the potatoes. Add black olives if desired.
